For those balmy summer days, what’s better than a cold, easy dinner? We recently learned to make our own coleslaw, and it is a fabulous side dish. Gluten and dairy free, it’s also suitable for vegetarians, and is a great, colourful way to eat those pesky veggies!
Half a red cabbage
1 red onion
1 tbsp apple cider vinegar
2 tbsp lemon juice
5-6 tbsp low-fat mayonnaise
Pinch of sugar
Salt and pepper to taste
Cut the red cabbage in half, then slice thinly. Peel the carrot, then grate, and chop the onion finely. Combine in a large mixing bowl.
Add the apple cider vinegar, lemon juice, plus pinches of salt, pepper and sugar, and mix well.
Spoon the mayonnaise into the bowl, and mix until combined. Place in fridge to chill, then serve.
We’ve served this with plenty of meals. Pork chops, spicy chicken, steak, even quesadillas. It also goes well the our spicy cheesy wedges, and can be taken to work too. The great thing is you can mix it up, by adding other vegetables or spices.
