This is, without a doubt, my favourite summer meal. It can be taken to work for lunch or a snack, or form the basis of a delicious meal. My partner is in charge of this meal, and he cooks it spectacularly.
Spicy Chicken & Vegetables
(This recipe makes enough for 2 dinners, or 4 lunches)
2 chicken breasts
Various spices – we use chilli powder, cayenne pepper, garlic salt, paprika and cajun spice
Line a baking tray with tin foil. Preheat the oven to 200 degrees.
Cut the chicken breasts into strips. Place in a mixing bowl with 2 tbsp oil, then add the spices. Mix well, then transfer the chicken on to a baking tray.
Cook for approx 25-30 mins. While cooking, slice onion and peppers into strips. Add vegetables to tray and cook for a further 5 minutes. Tip: we like our vegetables still crunchy, but you can cook them for longer if you prefer.
That’s it! Serve on their own with mayonnaise, or we also like them with our spicy cheesy wedges or coleslaw. This is a lovely and light summer meal, perfect for when we can’t be bothered to spend ages in the kitchen.
